Jamaican Jerk seasoning recipe

2 Table spoons dried minced onion

2 1/2 Teaspoon dried thyme

2 teaspoons ground allspice

2 teaspoons ground black pepper

1/2 teaspoon ground cinnamon

1/2 teaspoon cayenne pepper

1/2 teaspoon salt

2 tablespoon vegetable oil


Jamaican Fried Dumplins

4 cups all-purpose flour

2 tea spoons baking powder

1 1/2 teaspoons salt

1/2 Cup butter

1/2 cup cold water

1 cup vegetable oil for frying


Jamaican saltfish fritters

6 onces dried salted cod fish

Cold water , to cover

1 cup all-purpose flower

1 teaspoon baking powder

2 teaspoonsground black pepper

1/2 cup water

1 large tomato , chopped

Vegetable oil for frying


Puerto Rican tostones ( fried plantains )

5 tablespoons oil for frying

1 green plantain

3 cups cold water

Salt to taste


Puerto rican “Sofrito”

2  green bell peppers, seeded and chopped

1 red bell peppers, seeded and chopped

10 ajies dulces peppers, tops removed

3 medium tomatoes, chopped

4 onions, cut into large chunks

3 medium heads garlic, peeled

25 cilantro stems (with leaves)

25 recao stems (with leaves)

1 table spoon salt

1 table spoon black pepper
